- Ingredient selection: Choose fresh onions with firm texture and moderate moisture content.
- Onion slices should be uniformly thick, typically between 1.5-3 millimeters, ensuring rapid dehydration without excessive charring.
- Oil temperature control: Maintain oil temperature between 160°c–180°c (320°f–370°f). Lower temperatures cause excessive oil absorption, resulting in greasy texture; higher temperatures risk charred exteriors with raw interiors, potentially producing bitterness.
- Time control: Fry for 1–3 minutes, adjusted based on slice thickness and product type. Undercooking yields softness, while overcooking causes blackening and bitterness.
